A rich and creamy traditional Indian frozen dessert infused with premium saffron. Kesar Kulfi is known for its dense texture, slow-cooked richness, and royal aroma—making it a perfect indulgence for festive occasions and summer treats.
🛒 Ingredients
- 1 litre full-fat milk
- ¼ cup sugar (adjust to taste)
- 10–12 strands of saffron (kesar)
- 2 tbsp warm milk (for soaking saffron)
- ¼ tsp cardamom powder
- 2 tbsp chopped almonds & pistachios
- 2 tbsp milk powder (optional, for extra creaminess)

Soak Saffron
Add saffron strands to warm milk and allow it to release its rich color and aroma. -
Reduce Milk
In a heavy-bottom pan, boil the milk and simmer on low heat, stirring frequently until it reduces to about ¾ of its quantity. -
Add Sweetness & Texture
Add sugar and mix well until dissolved. Stir in milk powder (if using) for added richness. -
Infuse Flavor
Add saffron milk, cardamom powder, and chopped nuts. Mix well and cook for 3–4 minutes. -
Cool the Mixture
Let the mixture cool completely. -
Freeze
Pour into kulfi molds or small cups. Freeze for 6–8 hours or until set. -
Serve
Unmold and garnish with saffron strands and nuts before serving.
🌿 Serving Suggestion
Serve chilled on sticks or sliced on a plate, garnished with saffron and dry fruits for a luxurious dessert experience.
