🛒 Ingredients

  • 1 litre full-fat milk
  • ¼ cup sugar (adjust to taste)
  • 10–12 strands of saffron (kesar)
  • 2 tbsp warm milk (for soaking saffron)
  • ¼ tsp cardamom powder
  • 2 tbsp chopped almonds & pistachios
  • 2 tbsp milk powder (optional, for extra creaminess)

  • Preparation: 10 minutes
  • Cooking: 40–45 minutes
  • Freezing: 6–8 hours
  • Total Time: ~7–8 hours

🔥 Instructions

  1. Soak Saffron
    Add saffron strands to warm milk and allow it to release its rich color and aroma.
  2. Reduce Milk
    In a heavy-bottom pan, boil the milk and simmer on low heat, stirring frequently until it reduces to about ¾ of its quantity.
  3. Add Sweetness & Texture
    Add sugar and mix well until dissolved. Stir in milk powder (if using) for added richness.
  4. Infuse Flavor
    Add saffron milk, cardamom powder, and chopped nuts. Mix well and cook for 3–4 minutes.
  5. Cool the Mixture
    Let the mixture cool completely.
  6. Freeze
    Pour into kulfi molds or small cups. Freeze for 6–8 hours or until set.
  7. Serve
    Unmold and garnish with saffron strands and nuts before serving.

🌿 Serving Suggestion

Serve chilled on sticks or sliced on a plate, garnished with saffron and dry fruits for a luxurious dessert experience.
